Quinoa…

By now almost everybody has heard of quinoa(keen-wah). When I first heard about this grain like food, I was like, quinwhat!! It is  the only grain( well actually it is a seed) that  is known to have all of the essential amino acids, which is good for someone who doesn’t consume meat or very little. It is said that the Inca warriors ate it for stamina during war times. It does keep me full all morning.  It has an earthy yet hearty texture and flavor.  There are three  kinds… black, red, and white.  I have tried all of them, however, I  like the red and black best because they have a heartier flavor and works well with my steel-cut oatmeal  that I eat for breakfast many mornings.  You can get it from Whole Foods and Zerbos in bulk or you can buy it in a box from several grocery stores.  You have to rinse it very well before preparing because it has is a bitter substance called tannin on it.  I use a hand-held wire strainer when rinsing.  It takes about 20 minutes before it is done.  You’ll know it is ready when you see  some transparent circles around the edges.
